Best Au Gratin Potatoes and Ham!

Ingredients
4 Russet Potatoes, sliced into 1/4 inch slices1 Onion, sliced into ringssalt and pepper to taste3 Tablespoons Butter3 Tablespoons all purpose flour1/2 Teaspoon Salt1 cup half and Half1 Cup 1% Milk1 1/2 cups shredded Cheddar CHeese1/2 cup diced ham
Directions
Makes 8 small servings

Preheat oven to 400. Butter (Pam spray works great too) a 1 quart Casserole dish
Layer 1/2 of the potatoes in to the bottom of the prepared Casserole dish. Sprinkle 1/2 of the diced ham.Top with Onion Slices, and add the remaining potatoes and ham. Season with salt and Pepper to taste.
In a medium sized saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk and Half and Half. Cook until mixture has thickened. Stir in Cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour Cheese over the potatoes, and cover the dish with aluminum foil. Bake 1 1/2 hours in the preheated oven.
