16oz Enriched Macaroni, uncooked1 can pinto beans, drained1 can corn, drained1/2lb ground beef1 C shredded colby or cheddar cheese, low fat3 t Taco SeasoningI sometimes substitute a small can of Campbell's pork & beans for the pinto beans.
Cook macaroni according to package directions. While the macaroni is cooking, brown the hamburger. Drain & rinse the hamburger. Drain macaroni & add back into the pot. Add in the cooked hamburger, the can of corn (drained), can of beans (drained), cheese, and taco seasoning. Mix until cheese is melted. Serve immediately.

I made this with white navy beans, because that's what I had. I used low sodium taco seasoning & a mixture of cheddar & mozzarella shredded cheese. For me, this cried out for diced tomatoes, so I added a can of no salt diced tomatoes. When the cheese was melted, I dove in and, it was GREAT! - 2/9/17
