Ham & Egg Breakfast Scramble

2 Tbsp Canola oil1 1/2 C. Ham (I used left over Christmas ham)8 lg. Eggs (beaten)3-4 oz. Water1 tsp Salt1 tsp Black Pepper1/4 C. Green onions, chopped
Add oil to a deep frying pan. (Could use a non-stick and spray oil, I'm pretty sure).
Add ham to oil and cook for about 1 minute to heat ham. Add water, salt and pepper to eggs in a mixing bowl, beat roughly for about 20 seconds.
Add egg mixture to ham, and stir frequently until eggs are set, about 6 minutes.
I added my chopped green onion to the top of my scramble, after it was finished cooking and plated.
