Quick French Onion Soup

Ingredients
1 Tbsp olive oil1 Tbsp unsalted butter1 tsp garlic, peeled and chopped3 raw yellow onions, peeled and sliced3 cups vegetable broth3 slices of bread 3 slices of swiss cheese
Directions
Put olive oil and butter in large skillet. Turn heat to medium and stir until butter is melted.

Add the garlic and onions. Cook on medium heat until onions and garlic brown a bit. Adjust heat as needed so the vegetables don't burn.

Once the onions and garlic are a bit brown, add the vegetable broth, cover, and turn heat to medium. Stir now and then and let it cook for about 15 minutes.

Turn oven broiler to high and let heat. Fill each of three bowls with soup, top with a slice of bread and a slice of cheese. Place the bowls on a baking sheet and broil just a few minutes until cheese is bubbly.

Serve immediately.
