Chinese Cucumber Salad

1 cucumber, about 8 oz (250 g)1 teaspoon salt2 teaspoons sugar2 teaspoons Chinese rice vinegar
1 Rinse the cucumber thoroughly with cold running water.
2 Quarter the cucumber lengthwise. Remove and discard the seeds. Slice the cucumber diagonally into pieces, each about 1/3-inch (1 cm) thick.
3 Transfer the sliced cucumber into a bowl, add the salt and mix well. Set aside for 30 minutes.
4 Drain the water and add the sugar and Chinese rice vinegar to the cucumber. Stir to blend well. Chill in the refrigerator for at least an hour before serving.
Serving Size: Serves 4 as an appetizer as part of multicourse meal
