Banana Pancakes for Two

Ingredients
2 Medium Bananas (sliced)4 large eggs1/2 tsp ground cinnamon1 Tbsp olive oil for non stick purposes
Directions
Mix all ingredients (except olive oil) in a bowl with a mixer until no chunks of banana remain and batter appears light and creamy.

In a hot skillet roll the olive oil around until pan is covered. Pour batter as you would for any other pancake and cook until golden brown.

Serving Size: Makes 2- 4 pancake servings
