Lyle's Low Fat Hollandaise Sauce

1 cup plain yogurt*3 egg yolks1 teaspoons lemon juice1 clove garlic, finely minced2 teaspoons Dijon mustard1/2 teaspoon ground cumin¼ teaspoon paprika1/8-1/4 tsp red pepper flakes1/2 teaspoon salt¼ teaspoon ground pepper1 tablespoon fresh basil, chopped½ teaspoon honey, more or less
1. Using a double boiler thoroughly beat yogurt, lemon juice, and egg yolks. Stir in garlic.
2. Heat over approximately 1" simmering water, stirring frequently, for 15 minutes, or until sauce has thickened.
3. Stir in Dijon, cumin, paprika, red pepper flakes, salt, pepper and basil. Taste and add approximately 1/2 teaspoon honey, more or less depending on how "sour" your yogurt is. Taste and add additional salt, pepper and/or red pepper flakes if desired.
NOTES
Fat free, low fat or regular Greek Yogurt are all delicious.
