Creamy Chicken Wild Rice in Crockpot

1.5 pounds Chicken breasts1 C wild rice1 C Chopped Onion1 C chopped Carrot1/2 C chopped Celery1/2 t crushed garlic8 C chicken broth - low sodium1/2 C unsalted butter3/4 C flour2 C skim milk1/4 t sage1 t Oregano1 T Basil
Rinse the rice. Place the uncooked rice, raw chicken, carrots, onion, celery, garlic, spices in a crockpot. Cover & cook on low for 7-8 hours. The chicken should be cooked through and the rice should be soft.
Remove the chicken from the crockpot and allow to cool slightly. Shred the chicken & return to the crockpot.
Melt butter in a saucepan, add the flour and let the mixture bubble for 1 minute. Slowly whisk into milk, until a thick, creamy mixture forms.
Add this to the rice & chicken in the crockpot and stir to combine. Add extra water or milk to adjust the consistency.
