Bread-Free Chicken Salad Sandwich!

Ingredients
1 English cucumber, halved and seeded1/2 poached chicken breast, shredded1 Tbs diced pepper1/4 c diced tomato1 Tbs mayo1 tsp yellow mustarddill, S&P to taste
Directions
Boil chicken breast in salted water until cooked through (time depends on thickness of the chicken, but doesn't take long). Shred with two forks immediately.

Cut cucumber in half crosswise, then lengthwise. Remove seeds with a spoon.

Blend all ingredients and fill half the cucumber. Top with remaining half to make "sandwich".

Serving Size: One serving is two cucumber "sandwiches"
