Slow cooker Beef Stew

Ingredients

1 medium onion, chopper (about 1/2 cup)1 cup baby carrots2 cups sliced celery1 pound red potatoes, cubed2 pounds beef stew meat, cut into chunks2 teaspoons dried thyme leaves1 can (14.5oz) diced tomatoes, undrained3/4 cup water1 can (6oz) tomato paste
Spray 3 1/2 quart slow cooker with cooking spray
Place onion over the bottom of the slow cooker
Add the following ingredients in order:
carrots, celery, potatoes and beef
Sprinkle with thyme
Pour undrained tomatoes and water over the top of the beef
Cover, cook on low 8-10 hours or until meat is tender
Stir in tomato paste
Cover, cook 10 minutes more on high
Serving Size: makes 6 1-cup servings
