GLUTEN FREE SALISBURY STEAK

1 pound ground turkey 1/2 cup crushed corn tortilla chips (I use Mission Brand Tortilla Strips - they are totally gluten/wheat free!) 1 large egg whiteCooking spray or olive oil 3/4 cup water 3 tablespoons tomato paste 1/2 cup sliced fresh mushrooms2 tablespoons Madeira wine or dry sherry 1 1/2 teaspoons Worcestershire sauce 1/4 teaspoon fresh ground black pepper 1 (10 1/2-ounce can condensed French onion soup - Progresso brand is usually gluten free or you could make your own!)
Combine first 3 ingredients. Divide meat mixture into 6 equal portions, shaping each into a 1 inch thick oval patties. Heat a large nonstick skillet coated with cooking spray or olive oil over medium-high heat. Add patties; cook 6-7 minutes or until browned, turning after about 5 minutes. Remove patties from pan and keep warm. Stir in water and remaining ingredients. Bring to boil and add patties. Cover, reduce heat, and simmer about 15 minutes, spoon sauce over the patties periodically so they absorb all the yummy juices! Uncover and cook until wine mixture is reduced (this usually takes 15-20 minutes).
