1 1/2 c. soy milk1 1/2 tbsp. white vinegarmix together and set aside1 c. cornmeal1 c. flour (1/2 white, 1/2 whole wheat)2 tbsp sweetner (agave nectar)3/4 tsp. salt1 tsp baking powder1/2 tsp soda2 tbsp vegetable oil
pour into bread pan, bake at 400 for 25 minutes. makes 8 servings

I've made a recipe very similar to this numerous times. The only differences are I dont' add any oil and I usually add a whole 1/4 cup of sugar for added sweetness. I also use stone ground whole grain cornmeal and whole wheat pastry flour for more texture and fiber. My entire family loves this one! - 12/16/10
