Ingredients
1/2 C Egg Beaters1 C Spinach3 T onions1/4 C Peppers1/2 C Mushrooms1/4 C Tomatos
Directions
Saute all vegetables. Then add Egg Beaters to pan with vegetables. Cook for 5 minutes, flip and cook remaining 3 minutes or until eggs are done.

    Very nice, simple and healthy. Instead of tomatoes I used salsa and instead of egg beaters I used one egg plus 2 egg whites. Just can't eat egg whites only (yet)! Mine took a little longer to cook, maybe I used a smaller pan... - 7/10/11
