Balti Chicken in Hara Marsal Sauce

Ingredients
1 green apple -peeled, cored and cut into small pieces4 Tbsp. fresh cilantro2 Tbsp.. fresh mint1/2 cup low fat plain Greek yogurt3 Tbsp. part skim ricotta cheese1 tsp. salt1 tsp. sugar1 tsp. crushed garlic1 tsp. fresh ginger root1 tbsp. oil8 oz. boneless skinless chicken breast1/4 cup golden raisins
Directions
Mix first 9 ingredient's, through ginger root, in food processor for 1-2 minutes until smooth. Heat oil in large pan/wok add yogurt mixture and cook over a low heat for 2 minutes. Add cubed chicken breast and mix until well coated with sauce. Increase heat to medium and cook an additional 12-15 minutes until chicken cooked thru. Stir in golden raisins and serve over rice.
