Ellie Krieger's Broccoli Frittata

2 tsp olive oilmedium red onion, sliced2 cups broccoli, steamed and chopped into morsels4 eggs, 4 egg whites2 tbsp water1/2 cup white, sharp cheddar cheese, grated
Heat olive oil in large, cast-iron skillet.
Saute onion in hot oil.
Beat eggs and egg whites together with water.
Add broccoli to skillet with onion, mix together, and pour egg mixture over onion-broccoli mix.
Simmer for 5 - 8 minutes, until outer edges are firm and center is still tender.
Sprinkle cheese over top and season with salt and pepper.
Place under broiler just until cheese begins to melt and turn to a hint of brown.
Remove from skillet to plate, cut into slices, and serve!
