Spinach & Cheese Stuffed chicken breast

Ingredients
*Tyson boneless, skinless chicken breast, 20 oz Spinach, canned, 1 cup *Alouette, Lite Garlic and Herb, 6 tbsp Bacon, 3 medium slices*Salt & Pepper
Directions
Pound chicken breast out to 1/2 - 1/4 inch thickness. Drain canned spinach and mix with Alouette. Spread 4 tablespoons of mixture in each chicken breast and roll up tight. Wrap with 1 piece bacon. Season with salt & pepper as desired.
Cook in oven proof pan over high heat to sear. Bake until breasts are cooked through.

    This recipe is definitely a keeper. Due to the need for a low fat diet, I omitted the bacon. I sauteed fresh spinach with a squirt of Pam and used my immersion blender to mix it with the Alouette Cheese. DELICIOUS! Whole family loved it. - 1/30/15
