Lentil Sweet Potato Puree

Ingredients
2 tbsn. extra virgin olive oil1/2 medium onion, diced 3 medium carrots, sliced thin1 garlic clove2 tspn. curry powder2 tspn. turmeric1 tspn. cinnamon1/2 tspn. cayenne pepper1/2 tspn. thyme1 packet Knorr Homestyle Stock - Vegetable1 large sweet potato (2 cup diced)2.5 C red lentils
Directions
Sautee onion, carrots and garlic until soft
Add seasonings until blended, stirring occassionly
Add knorr packet and cook for a bit before adding about 10 cups of water
Add potato and lentils
boil until lentils and potatoes are soft.
Puree with an immersion blender
