Em's Quick & Basic Lasagna

12 lasagna noodles3 cups marinara sauce8 oz ground beef, extra lean (15% fat) 1 large carrot, finely chopped1/2 onion, chopped2 cloves garlic, minced1 small zucchini, chopped1 cup mushrooms, chopped4 cups mozzarella2 cups cottage Cheese, 2% Milkfat1 large eggSeasonings - oregano, basil, S&P, nutmeg to taste
Preheat oven to 350F.
Cook noodles. Scramble fry meat and veg. Add sauce and season to taste.
Blend cottage cheese and egg. Season to taste....oregano and basil, too!
Layer noodles, cottage cheese mix, 1 cup mozzarella noodles, meat mix, noodles, 3 cups mozzarella.
Bake at 350 for about 45 minutes or until cheese is nice and bubbly.
Let the lasagna rest for at least 10 minutes before serving.
Serving Size: makes 8 servings (about 4X4)
