Egg Canadian Bacon Breakfast Sandwiches

6 slices Canadian Bacon6 large eggs6 Rudi's Whole Wheat English MuffinsCooking Spray
1. Preheat oven to 375*. Spray either 6 ramekins or 6 cups in a muffin pan.
2. Crack an egg into a bowl and break the yolk. Don't go too crazy we don't want to beat the egg.
3. Pour the egg into the prepared ramekin/muffin cup and do the same for the remaining 5 eggs.
4. Place ramekins/muffin pan into oven and bake for 12-15 minutes or until egg is cooked.
5. While eggs are cooking toast all of the english muffins.
6. Once eggs are done remove from oven and let cool for 15 minutes. Once cool make sandwiches by layering english muffin, canadian bacon, egg, english muffin. Wrap in wax paper and freeze.
7. To reheat microwave for 1-2 minutes or until hot.
