Quinoa Mac & Cheese with Tomato & Broccoli

Ingredients
Ingredients:*Extra Virgin Olive Oil, 1 tbsp(remove)*Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry, 0.25 cup(remove)Garlic, 1 clove(remove)*Onion - Yellow - 1/4 Cup, .5 serving(remove)Cherry Tomatoes, Fresh, 1 Tomato, 5 serving(remove)Milk, 2%, with added nonfat milk solids, without added vit A, .5 cup(remove)Broccoli, cooked, 1 cup, chopped(remove)Cheddar Cheese, 2 oz(remove)Salt & Pepper to Taste
Directions
Saute onion, garlic & tomatoes in Olive Oil until onion is soft. Add 1/2 c. water, salt & pepper. Then add rinsed and dried quinoa. Cover pan and simmer until quinoa absorbs all the liquid. Meanwhile, cook broccoli and drain well.
When quinoa is done add milk and shredded cheese stirring until cheese is melted - stir in cooked broccoli and add additional salt & pepper or hot sauce if desired. Garnish with chopped tomato and green onion for some crunch.
