Turkey Vegetable Chili

8 ounces diced cooked turkey breast1 tbsp olive oil1 cup chopped raw onion4 ounces diced mushroom1 medium sweet pepper, diced4 ounces zucchini, diced2 tbsp chopped garlic2 tsp chili powder2 cups low sodium vegetable broth3/4 cup sliced carrots1 can Ro-Tel Diced Tomatoes with Habaneros1 can Pinto Beans, rinsed1 can Muir Glen Organic Fire Roasted Diced tomatoes
Heat up olive oil in soup pot, add chopped onions, peppers, mushrooms, carrots and garlic. Saute until onions begin to soften (about 10 minutes). Add zucchini, both cans of diced tomatoes, chili powder, and beans. Add vegetable broth. Let simmer for at least an hour uncovered on low heat, adding water as needed. Makes 8 - 1 cup servings.
