Mexican Lasagna

Ingredients
4 oz chopped green chiles3 T olive oil2 lbs shredded chicken2 T chili powder2 t ground cumin1/2 red onion1 - 15 oz can black beans14 oz can fire roasted tomatoes1 c frozen corn kernelssalt6 Joseph's Tortillas2.5 c fat free or reduced fat shredded cheddar cheese
Directions
Preheat oven to 425 degrees F
Preheat large skillet over med-hi heat
Add 1 T olive oil; swirl around pan
Add chicken & season with chili powder, cumin & red onion
Brown meat 5 minutes
Add fire roasted tomatoes
Add black beans & corn
Heat mixture through 2-3 minutes then season w/ salt to taste
Spray 13 x 9 pan with cooking spray
Cut tortillas in in half or quarters to make them easy to layer
Build lasagna in layers of meat & beans then tortillas then cheese
Repeat: meat, tortilla, cheese again.
Bake lasagna 12-15 minutes until cheese is brown & bubbly. Enjoy!
