Crustless Bacon & Spinach Quiche

Ingredients
8 large eggs1/4 cup heavy whipping cream1 cup shredded mozzarella cheese5 slices of thick cut bacon (crumbled)10 oz package of frozen spinach (thawed out & then drained thoroughly)
Directions
grease muffin pans with lard; preheat oven to 375 degrees

whip eggs and heavy whipping cream together

drain spinach and divide it among each of the muffin cups, and do the same for the bacon crumbles, mozzarella cheese gets divided as well

pour egg mixture on top (I used a ladle so that each muffin would get the same amount)

bake at 375 degrees, for 20 minutes, or until golden brown (insert toothpick or knife in the middle to check for doneness; if it comes out clean, then it's ready).





Serving Size: mixture poured into muffin cups yields 12 servings
