West African inspired lentil soup

Ingredients
1c lentils1/2c organic raw peanut butter2c corn1c peas1 small onion5 tomatoes1 inch fresh organic ginger root1tsp curry powder2tsp minced garlic1tsp tumeric1tsp chili powder1tsp cumin
Directions
combine onion,ginger,and 3 tomatoes in the blender and 3c water and blend till thoroughly dissolved.

add liquid to pot then add lentils,peas,corn and seasonings to pot

bring to a boil then add peanut butter

reduce to low and cook for 40 minutes

serve by itself or over rice

    I tried this for supper tonight. It is very delicious. I had roasted sweet potato slices to accompany it. The taste is spicy and soooo good. It pares well with the roasted sweet potato slices. - 5/16/16
