Lynz's Fabulous Fiesta Chicken Salad

1/2 tbsp extra virgin olive oil4 oz diced chicken breast1 tbsp Wildtree taco seasoning (you can use any taco seasoning, but the calorie content will change)2 cups romaine lettuce, chopped1/4 cup canned unsalted corn1/4 cup black beans1-2 tbsp taco sauce1-2 tbsp sour cream (can use reduced; I use regular)1/2 oz. blue corn chips1 large ziploc bag*optional1 oz sharp cheddar cheese (add 110 calories)
Heat frying pan and add 1/2 tbsp evoo. Dice & cook chicken breast. Add 1 tbsp. Wildtree taco seasoning. Do not add water, just sprinkle the seasoning over the chicken & stir in pan until no longer pink.
Remove pan from heat and allow to cool.
Next, chop your lettuce, measure out 2 cups and place in a ziploc bag. Do not close bag.
Place your corn & beans in a microwave safe bowl and heat until warm. Pour into lettuce bag. Add sour cream & taco sauce to bag as well.
Crunch your corn chips and add to the bag. Finally add your cooled chicken to the bag. Seal bag and shake until lettuce, corn, etc, are mixed well.
Pour into a bowl (I use a larger bowl as it makes a bigger salad).
Grab a fork & enjoy!
