Lemony Lentils with Kale

Ingredients
2 T olive oil1 onion, diced1 carrot, diced4 cloves garlic, minced4 thyme sprigsground black pepper to taste1/2 t. crushed red pepper flakes1/2 lb. green lentils1 (14.5 oz) can dices tomatoes, no sodium, diced3 c chicken broth, fat free, no sodium or water1 bunch dinosaur kale, stems removed, chopped1 lemon, zested and juiced
Directions
Heat olive oil, med heat, stir in onion carrot & garlic about 4 min., add thyme black and red pepper & cook 1 min.

Stir in lentils, tomatoes and their juice, stock or water into onion mixture, cover and simmer approx. 40 min., add kale, lemon zest and lemon juice; cook until kale is wilted about t min.
