Barbara's Tomato Bisque

Ingredients
1 tbsp. Butter1 tbsp. Olive Oil1.5 cups Onion2 medium stalks Celery4 medium Carrots3 cloves of garlic4 cups low sodium Chicken Stock3 14.5 oz cans Whole Tomatoes No Added Salt8 Basil Leaves3 Bay Leaves0.5 cup Light Sour CreamBasil to garnish
Directions
Put onions, celery, carrots, and garlic in food processor - process until finely chopped

Saute' in Butter and Olive Oil for 5-8 minutes

Add Chicken Stock and Tomatoes, chopping the Tomatoes with a spoon

Add Basil Leaves and Bay Leaves

Bring to boil, simmer on low heat for 30 minutes.

Remove Basil and Bay leaves

Let cool slightly, about 20 minutes and add Sour Cream.

Use blender or hand blender until smooth.

Garnish with add'l Basil if desired.
