Mini Spinach Souffle from "Eat to Lose, Eat to Win"

2-10 oz packages of frozen spinach thawed and drained1.5 cups diced mushrooms1 garlic clove1/4 C grated Parm Cheese1 Tsp dried oregano10 Egg Whites1/2 C Low sodium Marinara sauce
mix all ingredients together except egg whites
Beat egg whites until they form stiff peaks
fold into the spinach mixture
Spray muffin tin with Olive Oil
Fill each cup with spinach mixture
Cook about 20-25 minutes until a knife comes out clean
Top with a tsp of marinara and a pinch of parm cheese.
Serving Size: makes 9
