Easy Grain-Free Almost-Vegan Cheese Sauce

2 cups unflavored, unsweetened cashew milk - I used Silk brand18 tbsp nutritional yeast - Red Star and Bob’s Red Mill make products available in natural food sections of many grocers or bulk food sections4 tbsp butter1/4 cup hazelnut flour4 tsp Dijon mustard1/4 tsp minced garlic1/4 tsp onion powder 1/4 freshly ground black pepper to taste
1. In a medium sized bowl, whisk together the nut flour, nutritional yeast and nut milk so there are no clumps.
2. In a skillet, melt the butter. Add minced garlic and powdered onion to brown.
3. Add nut milk, yeast and nut flour mixture to skillet and whisk well. Reduce heat to low medium.
4. Add Dijon mustard and pepper and whisk frequently until the sauce thickens up, for 5 to 10 minutes.
Err on the side of stirring longer before adding more flour. Sometimes thickening will occur organically. If it’s still too thin you can add more flour to achieve the thickness you desire.
Serving Size: Yields about 2 cups, that is, eight 1/4 cup servings.
