Ingredients
1 tbls Extra Virgin Olive Oil1/4 tsp cayenne pepper 1/2 C chopped onion1/2 tsp cumin (ground)1 C. chicken broth, less/reduced sodium1/2 C Fat Free Half & Half1 (15.25 oz.) can Whole Kernel Corn 1 (15 oz.) can Sliced New Potatoes 1 (14.5 oz.) can Diced Tomatoes with Green Chilies 1/2 C hot salsa1 pound raw, peeled deveined shrimp
Directions
In large saucepan, heat oil over medium heat. Add onions, cumin and cayenne, salute until onions are softened (3-5 minutes).
Stir in remaining ingredients; bring to a boil, stirring occasionally.
Reduce heat; simmer 10 minutes or until shrimp are opaque in color and cooked through, stirring occasionally.
