Egg Cups

Ingredients
Egg Whites, 16 oz cartonEggs, 3Frozen Spinach, 10 ozCheddar Cheese, 1 CupCanadian Bacon, 7 oz packageSauteed Mushrooms, .5 CupChopped Fresh Broccoli, 1 CupWater, 1 CupSalt & Pepper to taste
Directions
Mix all ingredients in a bowl & ladle into cupcake tins sprayed with a little cooking oil. Bake at 350 degrees for 20 minutes. These can be eaten hot out of the oven, but what makes them really great is that you can freeze, then take one out each day for breakfast on the go. They reheat in the microwave very well.
