Broccoli Slaw - Asian style

Ingredients
1 bunch fresh asparagus (blanched and cut into 1 inch pieces.1 cucumber peeled and chopped1 bag broccoli slaw mix1/2 cup sugar1 cup white vinegar1/4 cup apple cider vinegar1.5 teaspoons grated fresh ginger1 tsp celery seed1 cup rice noodles (canned crispy) for garnish
Directions
Blanch asparagus in boiling water for 3 minutes, plunge into ice water to stop cooking and cut into 1 inch pieces. Add asparagus to large bowl, add broccoli slaw mix, cucumber, and toss. In a separate bowl mix white vinegar, apple cider vinegar, sugar, ginger, and celery seed until sugar is dissolved. Pour over slaw ingredients and toss. Refrigerate for several hours stirring occasionally until all vegetables have marinated. Serve cold.
