Kidney bean Apple salad

Ingredients
1 cup kidney beans1 chopped onion1 clove pressed/diced garlic1 chopped green or red bell pepper1 cored, peeled, chopped apple1-2 tbsp vinegar1 tsp/packet mustarddash of pepper
Directions
Drain canned kidney beans and pour into bowl. Add onion, green/red bell pepper, apple and garlic and mix well.
In separate bowl mix vinegar, mustard, pepper and pour over bean mixture.
Best if kept refridgerated overnight and eaten the next day but just as tasty same day too!
Makes approximately 3-4 one cup servings.

    This is one of the easiest recipe's to make and it is delicious. The vinegar-mustard combo was a bit too tart for me so I added a pinch of sugar. Friends and family had seconds. - 8/6/12
