Lemon-Garlic Shrimp Spaghetti

Spaghetti Squash, 1 cup Olive Oil, 2 tbsp *Extra Virgin Olive Oil, 2 tbspGarlic, 5 clove *Lemon Juice, 2 fl oz Parsley, dried, 4 tbsp Shrimp, thawed, 12 oz *Pine Nuts, 2 tbsp (optional)Parmesan cheese (optional)
Preheat oven to 400F.
Slice squash in half, scoop out seeds. drizzle olive oil over the squash. Add salt and pepper. Roast for 40-50 minutes until fork tender.
Place garlic and oil in a small skillet and cook over medium heat, about 1 minute. Add lemon juice, parsley, salt and pepper. Add shrimp and cook until pink. Remove from heat, toss with pine nuts. Serve over warm spaghetti squash and cheese, if desired.
