Sherry Garlic Fried Brown Rice

Ingredients
8oz fresh mushrooms, any kind, sliced2 Tbsp butter or margarine3 cloves garlic, crushed1-2 Tbsp dry Sherry8 cups brown rice, cooked1tsp ground ginger OR 1 Tbsp fresh grated ginger1/2 tsp salt1/4 cup soy sauce1/2 cup frozen peas, thawed2-3 green onions, sliced1 tsp Asian sesame oil
Directions
Melt butter in a large skillet or wok. Sautee mushrooms with garlic for about 5 minutes until soft. Add Sherry and allow mushrooms to soak in flavor. Add rice to skillet with ginger, salt and soy sauce. Once well mixed, add veggies and allow to cook 2-3 minutes until heated through. Toss with sesame oil and serve warm.
