Ingredients
2 large zucchini4 medium tomatoes1 small onion2-3 Tb. olive oil4 cloves garlicFresh basilGround oreganosalt & pepper1/2 cup parmesan cheese
Directions
Chop onion into rings, saute in olive oil with finely chopped garlic. Add sliced zucchini and oregano. When zucchini is soft, add tomatoes and basil. Add parmesan cheese a few minutes before turning off heat.
