PJs Homemade Almond / Walnut Granola

Ingredients
1 2/3 Cup Whole Oats1/3 Cup Olive Oil1/3 Cup Honey2/3 Cup nut pieces [I use a combination crushed almonds and walnuts]1/4 Craisins [Dried Cranberries]1 Tablespoon Cinnamon [optional]1 teaspoon Vanilla [optional]
Directions
Combine all ingredients in medium size bowl. Once thoroughly mixed spread on cookie sheet lined with parchment. Cook in a 250 degree oven for 1 hour. Do not overbake!

Granola will come out of oven soft but will harden up as it cools. Break it apart and put in airtight container.
