Vegetarian Crock Pot Minestrone

1 large can Italian style tomatoes3 carrots chopped1 large onion chopped1 green pepper chopped1 red pepper chopped3 garlic cloves minced1 Tbls mixed Italian herbs (oregano basil parsley)3 cans water2 cups cooked garbanzo beans (chick peas)2 cups cooked green beans2 Tbls. olive oil
Makes 8 servings.
Saute the chopped onions, carrots, green peppers and red peppers until onions are translucent. Add the minced garlic and saute additional 3 minutes.
Put in crock pot and add canned tomatoes the water and herbs. Cook in crock pot for 8 on low. Add chick peas and green beans. Salt and pepper to taste and serve with a grating of parmesan.
