Potato soup with bacon and cheese

14 med. potatos peeled and diced3 cans chicken broth 98% fat free1 can fat free evaporated milk2 tbsp. light country crock spread8 slices of bacon- for garnish3/4 cup shredded cheese-for garnish
Peel, wash, and dice the potatoes. In a large stock pot combine the broth and potatoes and cook on med. heat until soft about 20 min stirring occasionally. Add the milk and butter and let simmer for another 25 min on med heat stirring occasionally. While this is cooking, in a skillet fry the bacon to crisp stage. Drain on a paper towel and pat dry removing as much grease as possible. Let cool 5 min. Crumble. To serve, ladle soup into a bowl. Top with a few bacon crumbs and shredded cheese- I use 1 table spoon of each. Makes 10 1- cup servings
