Roasted Fingerling Potatoes

Ingredients
1.5 lb bag of fingerling potatoes, halved lenghtwise2T Extra Virgin Olive OilSalt, Pepper, and your favorite seasoning blend (we like Trader Joe's 21 Seasoning Salute for these)
Directions
On a foil lined baking sheet, toss potatoes, oil, and seasonings. Roast at 375 F for 15 minutes, flip and cook until tender, about 10 minutes more.
