Coconut Rice

Basmati white rice, 2 cupsYellow onion, choppedCoconut oilcoconut milkchicken broth
Directions
Cook rice and onion in melted coconut oil until onion is translucent. Add coconut milk and chicken broth. Remove from stove and bake in oven for 15-18 minutes.
