Spicy Ground Turkey and Peppers

2 tbsp extra-virgin olive oil1 cup chopped red bell ppper1 cup chopped green bell pepper1 cup chopped onion1 tsp VE Minced Garlic1 lb extra lean ground turkey (fresh, not frozen)1 tsp VE Chipotle Chili Powder (or chili powder)1/4 cup chopped green chilies2 tbsp fresh cilantroSalt, to taste
1. Heat the olive oil in a large skillet on medium heat.
2. Add the onions, peppers and garlic and cook until slightly softened. Push the vegetables to one side of the skillet.
3. Add the fresh ground turkey to the empty side of the pan (the side of the pan that has the most heat), sprinkle with chili powder and salt, to taste.
4. Brown the turkey and break apart while cooking. Once cooked through add in the pepper mixture from the side of the skillet and stir in green chilies and cilantro. Enjoy!
Serving Size: Makes 4 servings of 1 1/2 cups each
