Lentil Tacos

Ingredients
2 cups of lentils, washed2 cups of diced onions2 cups of diced celery2 cloves of garlic minced2 cups of your favorite salsa2 tablespoons of chili powder2 tablespoons of cumin1 teaspoon of red chili pepper flakes1 bay leaf4 cups of waterLettuces sliced into thin ribbons8 of your favorite tortillas
Directions
Wash the lentils. Dice the onion and celery. Mince the garlic. Combine all of the ingredients except for the water and tortillas in a soup pot. Bring to a simmer, then cook over low heat for 60 minutes.
Ladle lentils over open tortillas. Top with lots of lettuce ribbons. Add additional salsa as desired.
