B&J Coffee Ice Cream Homemade

2 Large Eggs3/4 cup plus 2 tbsp Sugar2 Cups heavy or whipping cream1 cup whole milk3 tbsp good quality freeze-dried coffee
1. Whisk eggs in a mixing bowl until light and fluffy, 1-2 minutes. Whisk in the sugar, a little at a time, then continue whisking until completely blended, about 1 minute more. Add cream, milk and 2 tbsp of the coffee and whisk to blend.
2. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.
3. After the ice cream stiffens (about 2 minutes before it's done) add the remaining 1 tbsp coffee, then continue freezing until ice cream is ready.
Serving Size: Makes 8, 1/2-cup servings
