Katie's Mint Chocolate Chip ice cream

Ingredients
Heavy Whipping Cream, 1.5 cup, whipped Vanilla Extract, 0.75 tsp Granulated Sugar, 0.5 cup Light Silk Soy Milk, Chocolate, 1.5 cup Hershey's Mint Chocolate Chips, 8 tbsp peppermint extract, 0.75 tsp Mix all ingredients except for the chips. Mix until sugar is completely dissolved. Pour into ice cream maker and let it mix for 25 minutes, then add the chocolate chips and mix for 5 minutes more.
