Chinese "go to" soup

Ingredients
1 tsp. sunflower oil1 large or 2 small cloves garlic, minced1 tsp. minced ginger2 medium tomatoes cut in large wedges3 heads baby bok choy3 cups water1 large egg, mixed with forksalt and ground pepper to taste
Directions
sautee garlic and ginger in sunflower oil, add in tomatoes, simmer for a couple minutes...do not squish tomatoes, throw in whole washed bok choy, add in water, simmer for 2 mins, once bok choy is soft, drizzle egg over, let simmer until egg is cooked. Pour into bowl and eat.
