Ingredients
1 tsp canola oil4 cups of potatoes: Your choice: Yukons, russets, red potatoes, cut into large chunks1 large or 2 small bunches spinach, washed and prepped.one small onion, chopped1-3T curry powder.CilantroSalt to taste
Directions
Saute the curry powder in the oil for a minute until very fragrant. Add onion and saute. Toss with potatoes and add water to barely cover. Simmmer covered until potatoes are tender. Stir in spinach and cover. Simmer 5 minutes. Add cilantro and serve with red lentil dal

    In response to the first comment, the first ingredient is canola oil. This was really delicious, I brought left overs to work and my co-workers wanted some just from the smell. I just used a quick spray from my PAM instead of oil and served with just plain red lentils. - 10/6/09
