Guy's Oatmeal Pancakes

1 1/2 cups milk1 cup rolled oats (prefer old-fashioned)1 tbsp. canola oil2 eggs, beaten1/2 cup flour1 tbsp. brown sugar1 tsp. baking powder1/4 tsp. salt
Combine milk and oats in a bowl and let stand for at least 5 minutes. Add oil and eggs mixing well. Combine flour, sugar, baking powder and salt then stir into mixture just until dry ingredients are moistened.
Bake on hot, lightly oiled griddle using 1/4 cup batter for each pancake. Turn when top is bubbly and edges slightly dry.
