Chorizo, bean, green bean and red onion salad

Ingredients
1 red onion, sliced1 sliced dry-cured chorizo sausageChopped fresh green beans1 400g can of rinsed and drained cannellini beans1/2t smoked paprikaPinch of saltJuice of 1 lemonHandful of baby rocket or spinach, to serveOlive oil for cooking
Directions
Cook 1 sliced red onion and 1 sliced dry-cured chorizo sausage in 1 T olive oil in a fry pan on med heat until the onion is soft and starting to caramelise.
Add chopped green beans (or asparagus, when in season) and continue cooking 1-2 min, until the greens are just cooked.
Add the cannellini beans, 1/2t smoked paprika, pinch of salt to taste and the lemon juice.
Toss together and cook for another minute or so.
Serve with a handful or 2 of baby rocket (arugula) or spinach.
