Ingredients
2 Avocados (small California) ripe enough to scoop from shell6 Tbsp. Organic Extra Virgin Olive Oi1/2 cup Cucumber - finely chopped/ grated1 Tbsp. red onion - finely chopped/ grated 2 Tbsp. fresh Lemon juice,1/8 - 1/4 tsp. granulated garlic ( or 1-2 clove fresh minced)1 tsp. dried dill (double if using fresh minced dill)Salt and pepper to taste
Directions
Combine grated cucumber and onion, avocado, olive oil and lemon juice with seasonings in deep narrow bowl. Use immersion blender to combine well. Store covered in refrigerator until using.
2 Tbsp. serving

Serving Size: 2 Tbsps - so about 12 per 1.5 cup batch.
